Given the choice, my children would eat pancakes morning, noon, and night. Toss some blueberries into the mix and they just might eat themselves into tummy aches.  Truthfully I could too.

Here is our recipe for super yummy blueberry pancakes

  • 3 cups whole wheat flour
  • 1/2 cup raw cane sugar
  • 2 tsp baking soda
  • 1 tbsp baking powder
  • 1/2 cup applesauce
  • 1 cup non-dairy milk
  • 1-pint blueberries

Mix all ingredients except blueberries.  Drop about 1/4 cup of batter onto a hot skillet and add blueberries.  Cook for about 2 minutes.  Flip and cook for another minute.  Serve with maple syrup and enjoy!
